I laid down on the couch last night after the kids were in bed and it became immediately clear that I wasn’t getting back up to write a post. I promise it won’t happen again!
Well since it was Saturday yesterday, we had to have pancakes! This weeks installment was the Pumpkin Pancake. This gave Trader Joes mix a run for their money! Take that, Trader Joes! They haven’t had their mix in lately, so I had to resort to making my own. Target has a lovely Pumpkin Pancake mix too, if you are in the market! Anyway, these are Kodiak Cakes with canned pumpkin mixed in. They have the recipe here, if you are interested. I have more good news for you Minneapolis folk – Byerly’s and Lund’s will start carrying Kodiak Cakes starting next month! Yay!
My kids love their breakfast foods. Who could blame them though? I mean, breakfast is THE BEST meal of the day!! Avery’s just a little impatient, that’s all.
It was a gorgeous fall day outside yesterday. With all the wind we had the past few days, all our leaves are blowing down. Boooooo. It’s a sign of bad things to come.
Eric’s dad is here once again for more garage fun! As I mentioned before, we figured we should finish this project so that buyers aren’t turned off as they drive by our house. I know I’d be reluctant to come look if there was an unfinished project outside. It could mean that there’s more unfinished bidness on the inside! Not true (sorta) in our case. Yeah, so the inside of the garage isn’t done. Whatever! It’s not like you’re going to live in the garage!
The little helpers were there to lend a hand.
How long will this sign be there? Long enough to see these leaves fall, get covered in snow and then bud over again with leaves??
Avos was checking out her new shoes. These are fancy ones with velcro. Her dad is a fan too.
Who forgot to put varnish on these boards? Might have to send the realtor new photos because DAMN! I’m gooood.
I don’t know who wouldn’t want to live here and see this!? I mean, it kinda makes me want to stay. If only it were 20 minutes closer to town.
And here is yesterday’s dinner – Eggplant Bolognese from Cooking Light. It was okay. I think I took too many noodles so the sauce didn’t go very far. I also didn’t quite follow the instructions to a T. Oh well. Notice how I sacrificed a couple basil leaves from my paltry plant? Probably not worth it, but oh well – it looked prettier this way. Later!
Yum!! you'll have to make pumpkin pancakes when I'm there!! and dinner looked great as well!! save up the basil, cause I bought some garlic tandoori naan to bring to make pizza with--I want a punch pizza!! we went for a lovely fall pontoon ride with Nanc and Rich yesterday as well!! (don't know what was Taco Jon's prob.--boat ran great!!)
