Work it, GIRL.

  Greetings from girl land!  It’s been a fun day with Avery so far.  She is much more easy going without her brother around to make her mad.  Smile  So far, we have snuggled, watched Sesame Street (Dylan HATES Sesame Street, so poor little Avos has never actually seen it until today.  Truth time though – she wasn’t a fan.  She just doesn’t quite “get” the draw of tv yet. Oh well!), had a yummy treat (see below), took a dip in the hot tub and had an almost 17 month old photo shoot!  Its nap time now, so I’m decompressing and trying to make my darn neck feel better.  Yet ANOTHER neck kink.  This happens to me a lot, I’m afraid.  Anywho, check out what we had for a snack!  DSC_1942

Girls just want to have fun!

  When is Avery going to start acting like a GIRL????  I got her these cute little “Ugg” boots today at Target and so far – she’s not a fan.  I’m hoping she was just in one of her “moods.”  DSC_1922 DSC_1924

WHAT is NOT to like here, Avos?!  Cuuuuuuute!  She won’t let me do her hair and she won’t let me dress her up!  If she didn’t LOVE to dance, I might be more worried. Wink DSC_1930

Eric and Dylan left this afternoon to go BACK to Crookston.  Eric is going to coach Dylan’s hockey team this year and in order to do so, he has to take a class on being a coach.  He claimed that none of the other times or cities would work for him to go to, so back they went to C-Town.  Which means – Girls Weekend! Just me, Avos and Millscat.  This also means I can make whatever the heck I want to eat and I won’t get any guff from anyone (Avery can’t talk very well yet, you see)!  So today while I was killing time in Brainerd, I picked up a wonderful little portabella at the Co-op for my consumption this evening!    DSC_1934 DSC_1935

Behold – the Portabella Burger with Avocado Spread.  When I got home from shopping, I had to figure out what I had on hand in order to come up with what to make.  I had some avocados that were in desperate need of being used up, so this recipe it was!  I used Greek Yogurt in place of the regular yogurt and opted to not put extra slices of avocado on top (mainly b/c the avocados I had were having some issues and were unusable for the most part – thanks a lot Cub Foods!).  DSC_1937

Had a side of Kale Chips and also some Alexia Spicy Chipotle Sweet Potato fries. DSC_1939

Oh, was this a good dinner!  LOVED IT!  Would totally make it again and am contemplating driving back to the Co-Op for MORE mushys!  Open-mouthed And higher quality avocados too!  Hmph! DSC_1941

The Land of Several Lakes

  Yesterday morning, we woke up to find that our yard had grown a few more lakes.  Not only did we have Lake Dylan (completely normal) – we had Avery Canal, Milly Pond, Trishy Lagoon and Eric Reservoir.  It was definitely the most water we had ever see in our yard.  Ever.  I think Eric said we got 4 inches of rain?  DSC_1875

Avery Canal is over to the left.  Milly pond is up by the beach.  Lake Dylan is that big lake in the middle.  Don’t confuse that one with Lake Sullivan.   Eric Reservoir is up by the swingset.DSC_1876

Even the Winerchesky’s got a new body of water in their yard! DSC_1880 After we oooh and ahhhed at the water outside, we had to make up the pumpkin seeds! DSC_1883

Would you believe that Avery was mad at me because I vacuumed up the crumbs of the brownie she was eating.  Yeah, she wanted to eat them off the floor.  I swear, I think I’m going to start putting her food on the floor because it appears that’s the surface she prefers to eat it from.  Sarcastic DSC_1886 DSC_1888

And here is what we woke up to this morning.  Snow.  And no power.  Yeah, lights went out at 8:30pm and didn’t come back on until 6:30am.  And then went out AGAIN this morning for a couple hours.  That was one hefty wind, I tell you! DSC_1902

These are Korean Meatballs from Cooking Light’s October 2010 issue.  They were okay.  Kind of a bitch to make because handling raw chicken is not my most favorite thing to do and forming them into balls was tricky because they were so sticky.  Hey – I’m rhymin’!  We had orzo with pine nuts and garlic as a side along with steamed broccoli.  All in all, a solid meal.     DSC_1921
